Dining PIX: Butterfield 8

RECIPES AND VIDEO AFTER THE JUMP...

Butterfield 8 Mac and Cheese
1 lb. elbow noodles
1 qt milk
1 qt heavy cream
1/2 cup cheddar cheese
1/2 cup American cheese
1/2 cup Asiago
1/2 cup Velveeta
1/2 cup Parmesan cheese
1/2 cup mozzarella cheese
1/2 cup bacon
2 Jalepenos
Roux: clarified butter and flour, salt and pepper.
Instructions:
- Bring water to a boil for elbows, add salt to the water.
- Bring milk & heavy cream to a slow boil.
- Cut cheese into cubes.
- Dice bacon and cook off.
- Take seeds out of jalepenos and dice.
- Cook elbows al dente.
- Whisk in all cheese to the milk and cream. Reserve small about for the finished product.
- Once cheese sauce is at a rolling boil, add roux to desired consistency, simmer for 20 minutes to cook out the roux.
- Finish by adding bacon and jalepenos, cook 2 more minutes, add rest of cheese stir 3 times then plate.
