Dining PIX: Ferrara’s Café

Dino Ibelli of Ferrara's Ristorante and Uncle Vinnie's Comedy Club in Point Pleasant Beach, New Jersey joined us this morning for Dining PIX. He showed us how to make Shrimp Di Stefano and Chicken Scarpariella.

RECIPES AND VIDEO AFTER THE JUMP...

Shrimp Di Stefano
Ingredients
8 shrimp
2 oz. white wine
1 garlic bulb
4 large mushrooms
3 artichoke hearts
1 oz. butter
Sprig of parsley

Directions
1. Saute garlic in your saute pan, add peeled and deveined shrimp to the saute pan, when the shrimp starts to cook add sliced mushrooms and artichoke hearts to the saute pan.
2. Add white wine to the dish as well as some butter and reduce the wine.
3. Serve over some linguini and top with fresh chopped parsley.


Chicken Scarpariella
Ingredients
5 oz. chicken strips
3 oz. sweet sausage
2 oz. white wine
6 large mushrooms
1/2 head of broccoli
1 garlic bulb
1 oz. butter
Sprig of parsley

Directions
1. Saute garlic in your saute pan, chicken strips with slices of sweet sausage to the pan.
2. Once chicken is cooking, add sliced mushrooms and broccoli to the saute pan.
3. Add some cooking white wine and butter to the saute pan and allow chicken to fully cook in the saute pan.
4. Top with fresh parsley and serve over linguini.

I am a comedian that works at Uncle Vinnie's regualrly and all I can say is that they are the best owners to work for, they truly love comedy, the patrons are terrific that go there and the food is to die for. Definitely worth the trip if you are someone looking for a great night out of food and laughs.
