Learn To Cook And Eat Good Food At Pamploma Restaurant

Chef Alex Urena of Pamplona Restaurant is stopping by to show us how to make Paella -- a classic Spanish rice dish.

Pamplona is also offering several cooking classes this month, which run from 10am to 2pm starting with a light breakfast followed by a hands on culinary experience then finish with a light lunch paired with Spanish wines.

January 24 - Mommy and Me, Taught by Daddy Simple: dinners to make with your kids
January 31 - Mommy and Me, Taught by Daddy Dishes: for picky eaters

COOKING DEMO AND RECIPE AFTER THE JUMP...

Pamplona's Paella
Ingredients
½ Onion
1 red pepper
3 cloves garlic
1 ½ tbsp. paprika
1 chorizo link
1 chicken leg
5 oz. rib eye
½ lb. rice
Pinch saffron
½ qt. chicken stock
10 cockles
10 mussels
6 shrimp
4 tbsp. olive oil
Salt and pepper

Method
1. In very large, wide sauté pan or paella pan, make a sofrito by sautéing in olive oil the onions, peppers, garlic, and paprika on low heat
2. Season with salt and pepper.
3. Add diced chicken, steak and chorizo
4. Add rice
5. In a separate pot on medium heat, steam mussels and cockles just till open. Keep them to the side
6. Drain liquid from mussels and cockles add liquid to the rice
7. When rice is almost cooked, add shrimp
8. When paella is almost cooked, about 40 minutes, remove the cockles and mussels from shell or keep them in shell
9. Mix them into rice until warm and serve

I an a loyal viewer of the morning news. Everyone really knows how to perk people up to go to wok . lol I am Puerto Rican and this is a dish I have heard so much about , but never gor the recipe. Thanks to you I do now. When I make it tonight, I'm taking some to my Grandmother. If it passes her authentic taste test then we know it's good. lol lol
