On today's show we made Frank's Veal Cutlets Milanese. The recipe:
FRANK'S VEAL CUTLETS MILANESE
SERVES 8
½ small Italian stale baguette (about ½ pound)
2 tablespoons freshly grated Parmigiano-Reggiano
Pinch of oregano
¼ cup minced flat-leaf parsley
1 cup plus 3 tablespoons olive oil
¼ teaspoon salt
1/8 teaspoon freshly ground black pepper
½ cup all-purpose flour
2 large eggs, beaten
8 veal cutlets (about 1 ¼ pounds), pounded this to slightly less than ¼ inch
Salt and freshly ground black pepper to taste
1 lemon cut into 8 wedges
Break or cut the bread into large chunks and place in a food processor. Process until the bread is reduced to fine crumbs. Transfer the crumbs to a large bowl and stir in the cheese, oregano, and parsley. Gradually add 3 tablespoons of oil, stirring, until thoroughly combined. Season with the salt and pepper.
Spread the flour on a large plate, place the eggs in a shallow bowl, and spread the seasoned bread crumbs on a second large plate. Coat each veal cutlet in the flour, then the beaten eggs, and then the bread crumbs, patting with the palm of your hand to ensure adhesion.
Heat 1 cup of the oil in a large nonstick skillet over medium-high flame (to a frying temperature of 350 F) and sauté the veal for 2 minutes. Turn and sauté for 1 additional minute. Do not crowd pan. If necessary, fry the cutlets in batches. Remove with a slotted spatula and drain on paper towels. Season to taste with salt and pepper, and serve with lemon wedges.

Wakeup Workout: Nets Dancers Workout
The Nets Dancers are hosting several dance clinics so you can learn their fancy moves. They showed our Jill Nicolini the exercise routines that keep them in tip-top shape.
Nets Dancer Clinics & Boot Camp: They are offering clinics for trained dancers at the Nets Practice Facility in East Rutherford, NJ on Sat May 17 and Sat June 7. They are also offering a five-day Nets Dancer Boot Camp on June 15-19 for dancers who want the real Nets Dancer experience and the ultimate preparation for open auditions, which will be held the following weekend (Fri June 19 in NYC and Sat June 20 in NJ).

What to avoid: Some of the lower calorie options at Jamba Juice are filled with more artificial ingredients that have no nutritional benefits
2. Starbucks: Spinach, Roasted Tomato, Feta & Egg Wrap - 240 Calories
Why it's a good choice:
- The egg will provide you with protein to keep you satiated for longer
- The spinach and roasted tomato provide you with your vegetable intake
- The feta will add some healthy fats to your meal
What to avoid: Most of the food items and drinks here are extremely oversized and unhealthy - stick with small portions for a special treat and a tall for any drink other than plain coffee
3. Chipotle: Burrito bowl with rice, black beans, fajita vegetables, red or green salsa, tomato, and lettuce - 430 calories
Why it's a good choice: The tortillas are the breaking point at Chipotle, skip it and opt for the bowl - even if you add a meat or one additional topping (like guacamole which is high in healthy monounsaturated fats) you'll still be better off
What to avoid: Skip the extras like corn salsa, which is high in carbohydrates, or the sour cream and cheese
4. McDonalds: Premium Grilled Chicken Classic Sandwich - 420 calories
Why it's a good choice:
- This sandwich has more calories than other chicken sandwiches on the menu, but it's lower in total and saturated fat
- The protein in the chicken will keep you more satisfied
What to avoid: When you're hungry - skip the salads - they are doused in unhealthy dressings and don't fill you up
5. T.G.I. Friday's: Sizzling Chicken and Broccoli - 500 calories
Why it's a good choice:
- Broccoli is a great source of fiber
- The chicken gives you protein to keep you full
What to avoid: The more complicated dishes at this restaurant are loaded with calories and fat - stay away from anything with a lot of toppings or a lot of ingredients
6. Olive Garden: Venetian Apricot Chicken - 448 calories
Why it's a good choice:
- This dish has slightly more calories than other dishes - but less fat and carbohydrates
- The chicken is served on a bed of nutrient-rich vegetables.
What to avoid: Stay away from the extras at this restaurant - the breadsticks and heavy cream sauces are loaded with empty calories

Paul Labrecque and his team can apply the hair extensions to recreate 3 Oscar looks on three women (one caucasion, one black, one latina ), with each style achieved with an extension technique suitable for their hair type. The hairstyles can either be the three hottest looks from last year, or looks based on Paul's predictions for this year. For example: Sewn in weave with lace front cap will be applied on a black girl to recreate Beyonce's cascading bouncey locks. Protein extensions (strand by strand) will be used on a white girl to recreate Reese Witherspoon's long golden locks with whispy bangs Custom blended clip in extensions will be applied to add "strategic volume" to a latina girl's hair in order to achieve J-Lo's retro waves.
